Oven-Baked Chicken Wings:
-Season wings with salt, pepper, garlic powder, smoked paprika, and cayenne pepper.
-Place wings face-down on cooling rack in aluminum foil lined baking sheet.
-Bake for 20 minutes at 400 degrees Fahrenheit, then flip, and bake at 400 degrees Fahrenheit for another 20 minutes.
Deep-Fried Chicken Wings:
-Heat 2 Quarts of Peanut Oil to 360 degrees Fahrenheit.
-Fry Chicken Wings in small batches (12-15 wings) for 10-12 minutes at a time.
-Place on cooling rack and let rest shortly then serve.
Craig’s Bleu Cheese Dressing:
1/2 Cup Crumbled Bleu Cheese
1 1/2 Tsp. Goat Milk (or Buttermilk)
2 Tbs. Whole Milk Greek Yogurt (Sour Cream)
2 Tbs. Mayonnaise
1/2 Tsp. Sugar
1/2 Tsp. Garlic Powder
1/2 Tsp. Celery Seed
1/2 Whole Black Peppercorns (Coarsely Crushed)
Craig’s Buffalo Wing Sauce:
1/2 Stick of Butter (Melted)
1/2 Cup Frank’s Red Hot Sauce
2 Tbs. Hot Sauce
1 Tbs. Brown Sugar
2 Tsp. Apple Cider Vinegar
1 Tsp. Red Chili Flakes
